i'm not the most qualified to answer this, but i'd hope you have some type
of real IDS looking for other types off interesting activity and watch the
disect everything coming to you from that particular ip or whatever then if
you can get a trace and feel the need to report it to the isp do so, or you
could just block everything from that ip.

and if my suggestions seem laughable, i repeat once more, i'm a new comer to
the werld of net security and i pretty much now nuthing, just suggestions

I get UDP port scan on my firewall at least 5 a day. How does one respond
to a probe ?

Any suggestions ?
