You can find a HOWTO on using software RAID here:

Other documentation can be found in the raidtab(5), raidstart(8), and
mkraid(8) manpages. (Which are most easily read once the system is
installed and booted.. heh heh heh.)

I don't think the installer can pull this sort of stunt; you may need to
install to one disk first, and then configure the raid device. You will
need to trick it into thinking that one of your drives has failed, that
you have inserted a new hot spare, and reconstruct the raid device. I
hope that sentence makes a lot more sense after you've read the RAID
HOWTO. :)
