It would appear from your "ps" output that you've only started the
authdaemond daemons... you also need the actual imap daemon. My courier
installed a startup script for the imap daemon in
/usr/local/libexec/imap.rc, yielding me the following process in
    addition to the authdaemonds:

    /usr/local/libexec/couriertcpd -address=0
    -stderrlogger=/usr/local/libexec/logger -stderrloggername=imapd
    -maxprocs=5 -maxperip=4 -pid=/var/run/imapd.pid -nodnslookup
    -noidentlookup 143 /usr/local/sbin/imaplogin
    /usr/local/libexec/authlib/authdaemon /usr/local/bin/imapd Maildir

You might wanna look for that script somewhere in your installation.

    > Where does courier-imap log to?

syslog's LOG_MAIL, under the name specified in "-stderrloggername" in
    the process above.

    > Should there be other daemon processes running?

    Yes, see above.

    Good luck,
