see, the thing was..I went in /etc/postfix for the first time and saw all
these .cf files. At first I thought, ok, are they split up for ease and
these sample files are REALLY parsed by the program?
After a little bit I figured out they're not..then I asked, ok, if they're
not parsed, are the values set in them the actual default values for the
program? Perhaps simply putting them in a subdirectory called "samples"
would have answered all my questions.

I would have proposed something like, having everything in main.cf like i
said and having 2 sections "# VARIABLES COMMONLY DEFINED " and "#
VARIABLES COMMONLY LEFT ALONE" and underneath those variables set to
whatever the default is.
But you state this might cause upgrade troubles. that's fine, whatever you
think best.
