Because currently that's the only way for deliver to retain the
envelope sender, which the vacation extension relies upon.

I don't know if that's entirely true. The RFC for LMTP (2033) was
written by John Myers while he was at CMU. Apparently they not too
long ago looked at Postfix, but remained with Sendmail because of
some requirements that I don't remember.
