that's the easy part. just set the MX records so that your mail server
is the secondary mail exchanger for the domain. when they're down, mail
will be delivered to your server and stored in the queue.
the difficult part is figuring out where to deliver the mail to when the
ETRN command is issued.
if the client has a static IP address, then no problem. it just works.
if they have a dynamic IP address then you can not get it to work
reliably. at best you can get it to work some or even most of the time.
