This is nonsense. Name one Unix mail client that does not either: a)
explicity request the address of an SMTP server, or b) use
/usr/sbin/sendmail to directly inject the email message into the mail
system.

Either way, you're able to control how messages are delivered. Not a
single one of my unix boxes here that is not a mail does direct
delivery; they all just forward to the dedicated mail host.
