I have used both models:
1 - UNIX systems drop all mail to the mail server.
2 - UNIX systems deliver directly to the internet.
In both cases I was in full control over mail configurations. Each
model has advantages and disadvantages.
(1) Loads the server more, but gives more control at the server.
(2) If machines are turned off at night and over weekends, then
mail can stay queued up much longer than expected.
What's beter depends on circumstances.
