We are running a multiple instance multiple IP postfix setup here.
I'd vote for 2 additional configuration parameters:

        inet_interfaces the IPs this instance is listening on
                                (just the old one)
        inet_preferred the IP to bind for outgoing connections
                                no change if unset or empty
        syslog_ident some string to insert into syslog strings
                                e.g. "postfix/<component>(ident)"
