Sounds like you're talking about Postfix's always_bcc option. In
main.cf, set
always_bcc = address
then arrange for address to be able to handle the volume of email it
will receive, since it'll get a copy of everything postfix handles,
other than its own internally-generated bounce messages.
If you don't actually want everything, you can have the address
handled by a procmail or maildrop filter that pulls out the messages
you're interested in, and tosses everything else.
