Ralf Hildebrandt already commented your change to master.cf.

Now, let's find out why you do have a delay of 5s on startup...
(I don't have any delay on startup, and I don't see any reason
why should have one; I have both HP-UX and Linux versions running).

Whenever an smtp connection is opened, postfix does several hostname and
IP address checks. I would suspect those, especially since you get
...socrates[127.0.0.1]...
127.0.0.1 == localhost
socrates.XXXXXXXXX.de == 192.168.?.? (?, since I don't know better)
But socrates != 127.0.0.1

What kind of setup are you using? DNS, NIS, /etc/hosts, all? Do you have a
dialup connection and/or a local DNS server?
