# apt-get remove exim

but it'll complain. Better yet,

# apt-get install postfix

This will prompt you for removal of exim while it installs postfix. Then,
check out how (and where) the Debian postfix package is installed with,

# dpkg -L postfix

and adjust your installation accordingly and rebuild from source.
