It would be great to have any "guessable" date format to work. For
example, tuesday
reminder.mydomain would resent the mail next
tuesday. Or 2000-09-01
reminder.mydomain on September 1st. The
person to send it to is the sender of the message here, and could be
changed by sending the mail to
2000-09-01+otherlocalaccount
reminder.mydomain.

You can define a new transport for reminder.mydomain.com to call
your own program (that does all the job). And you can use Postfix
access rules to restrict access to
reminder.mydomain as you like.
