 Are you running chrooted? Is the hosts file in the jail up to date?

 Anyway, this works for me, the name of the internal server appears
 just fine in the logs.

/etc/postfix/transport
internal.domain :[name.of.internal.mailserver]

search order for hosts in nsswitch.conf is files, dns.
