Under these conditions, performance measurements are irrelevant.
You need to fix this problem first. Until then, it does not matter
if you use Postfix, Sendmail, or whatever.
I am not a Linux `expert' so I can't tell you how to tweak Linux
to run 1000+ processes. I suggest asking around on a Linux specific
mailing list.
