this doesn't work. In your setup both mail1 and mail2 serves foo.com, and
and mail1 && mail2 will (should) accept mail for userxfoo.com.

yes, but the MTA who send a mail for user3foo.com see that mail1 is and MX
for foo.com, send it the mail.
