Is there an X-Mailer line in the message, like
X-Mailer: Mozilla 4.61 [en] (WinNT; I)

I'd guess it's a dodgy mail client at the sender's end. Either that or the
sender's mail server or Exchange is tampering with the message and screwing
it up.
