transport_maps = hash:/etc/postfix/transport
Then created
/etc/postfix/transport
with
appli02.mib.fr smtp:[appli02.mib.fr]
and
postmap transport
postfix reload
No changes (no forwarding or tranfer to appli02) , same logs.
What's the meaning of:

We've got about 20 machine is this domain.
There is a mécanism off nominal - backup between the 01 branch (nominal) and
02 branch (backup).
Incoming mails are recivied by 01 branch then must be forwarded on 02
branch.
Incoming mail shall be adressed to anyuser
anysubdomain.e-mportail.net,
that's why I've set the all_regexp system.

Do you have that many machines in you subdomain? Try listing them
explicitly and make an exception for appli02.
Or make an explicit transport_maps entry:
appli02.e-mportail.net smtp:[appli02.e-mportail.net]
