You could use virtual_maps for that ...

just leave in virtualmap file:
thatuser
bluelabs.se newaddress
someotherplace.net
if no match is found in virtualmap file, postfix continues the delivery of
the message as if nothing were in the virtualmap file, soi assuming you
already sent mail to bluelabs.se fine, there's no problem
