Either use postfix-snapshot and play around with user specific transport
maps or use the normal postfix and pipe the whole domain into e.g. amavis
which has the capability to sort our specific user as virus_lovers or
check_bypass candidates. I'm currently evaluating this method.
Hint: you can even setup one postfix with two different smtpd processes in
master.cf, each listening on their own IP and having a different
-o content_filter=...
-o relay_domains=..
So that the MX for some domains completely bypass the content_filter!
