if you mean it's a virtual_maps, than cleanup daemon that rewrites
recipient before/while writing the message into queue. yes, it's
long before virtual delivery agent.

virtual_mailbox_maps (since 20020715) support
domain.tld catch-all
map entries for virtual mail delivery agent.
then the solution maybe simply don't use virtual_maps but
specify catchall address using virtual_mailbox_maps.
