  OK, this is weird. Sorry my initial reaction was to yell.

  It certainly appears something is filling up one of these partitions
with files which then go away again without action on your part. This
doesn't give quite enough information, though.

  Where do you have the Postfix queue set - is it the standard
/var/spool/postfix?

  Where do you have amavisd set to unpack files? Is it also on /var,
on the same partition?

  What else could run on that system and saves files to /var?

  It is possible that your users are getting sent messages with huge
compressed attachments, and that they are consuming all disk space when
amavis unpacks them to scan them. It is also possible, depending on
what else you have on that system, that some completely unrelated
process is eating up the space. Look at your kernel log on this
system. Postfix is surely not the only application affected by this.
