character encoding

I am having some problems with character encodings on my postfix. The
characters "æøå" becomes "XXX" in the headers.

This happens when using /usr/sbin/sendmail to send mail. Regular mail
coming in from the smtp are all fine.

Any ideas of what's happening here?
