Yes. You're most likely using Cyrus IMAPd which does this by default.
Am I right when I guess you're running Cyrus?

I believe I've seen a patch for this somewhere (to let Cyrus save the
messages as-is without changing 8-bit characters to "X") but I can't
remember exactly where I saw that patch.
