How do I use maildir style inboxes out of $(HOME)?

Hi!
I have had a hard time "googling" for how to make postfix deliver mail
for my local users to a maildir style inbox like /var/spool/mail/<user>/

The documentation states that 'home_mailbox' is a relative path counting
from the users $HOME directory, so I suspect that it can't be used for
any good in my case.

This must be something that is frequently done? How?
