Maybe I misinterpreted the SYSLOG entry.

These are the only two types of entry I'm seeing (and the system is
definitely not passing mail traffic, with or without AMAVISD-NEW
being enabled) that have any sort of warning or error. The rest are
minor such as "2003 Oct 1 18:27:08 mailfilter postfix/master
mail.info postfix/master[20064]: daemon started -- version 2.0.16" and
do not seem relevant to the trivial-rewrite errors.

To me, the log entries I posted previously say:

"The process Postfix/Master with PID#20064 is issuing a warning that
the sub-process /usr/libexec/postfix/trivial-rewrite has a bad command
sequence on attempting to start and is being throttled"

and

"The process Postfix/Master with PID#20064 is issuing a warning that
the sub-process /usr/libexec/postfix/trivial-rewrite with PID#28069
has exited with Status 1"

Since these are not what you seem to expect, it is likely that I have
read them incorrectly. Can you guide me in finding the correct logs /
data to post so that I correctly describe my problem?
