Most people just use two MX records, e.g.
domain.com MX 10 primary
MX 20 backup
If sending mail to the primary fails, any client will simply send to the
backup. This is the most trivial solution. However, make sure your UCE
policies are identical. Spammers will try the backup just as much as the
primary.
