Thanks for the confirmation, Wietse. Are there any postfix config options to circumvent the problem temporarily? I.e.
- auto-convert non-text content or
- force the sending MTA to send 7bit only (SUPRESS 8BITMIME via HELO-only) or
- ignore errors (with disable_mime_input_processing = no)
Not sure if my interpretation of the config options really is right. This would only be a shorttime fix to be able to force the sender to fix its problems and nevertheless receive the mail in the mean time ...

Yes. Non-text content should be encoded by the mail user agent.
