I believe this is the relevant part:
SYNOPSIS
postmap /etc/postfix/canonical
"compile your map"
postmap -q "string" /etc/postfix/canonical
test your map
postmap -q - /etc/postfix/canonical <inputfile
test your map with a lot of input...
