Hi again,
        Thanks for the reply Patrick. In researching exactly what
Apple have done, it would appear that they simply have Postfix
configured in the traditional manner using /etc/postfix as a based &
in default install, inbound SMTP is disabled. Outbound SMTP is
usually via the sendmail commands depending on what email client is
sending.
        I run Tenon's iTools, which simply modifies what is
apparently a fairly standard install of Postfix, into a proper SMTP
server for in & outbound mail, so hopefully my upgrading will only
modify what I have already got set up. I have modified Tenon's setup
substantially, but nothing outstanding, so hopefully I should be
looking simply at a normal run of the mill upgrade to an already
running server.
