The most common cause for logging to stop is a deadly interaction between
Linux syslogd stupidly closing, deleting and rebinding /dev/log at every
log rotation (typically daily at 4am) and chroot jails.

If you want reliable logging on Linux, you need to bind an extra instance
of the log socket inside the Postfix chroot jail.

Better yet, don't bother with chrooting Postfix on Linux, don't secure
a wooden outhouse with a bank-vault door. To disable chroot change all
the chroot column values to "n" in the master.cf file.
