Pushing mail through a certain interface.

I'm using Postfix as a mail relay for an exchange
server.

I want to push the mail from a multihomed postfix
server to another multihomed server. How can I do
this? Do I do it with postfix or do I have to use
IPCHAINS?

At present postfix receives mail in a DMZ on
192.168.2.201 processes it then sends it to
192.168.1.12.

I figured it would be better for performance to have
the exchange server multihomed and sending/receiving
on one card 10.0.0.2 and postfix doing the same. I
added an additional card to postfix, gave it an IP
address of 10.0.0.1 abd put a crossover lead in. Put
in a route so now, if I ping 10.0.0.2 with the cross
over plugged in I get a response unplugged I don't. So
I figure the assumption would be that if I edited
transport.cf with the IP address on 10.0.0.2 it would
forward to there, it does but does it whether the
cable is in or out, i.e. it is using another route?
How? Does postfix push out on any interface? At
present I have it set to listen on all? By listening
on all is it sending on all?
