The apache logs of which you speak are written by httpd to files.
Postfix, in contrast, uses the system syslogd for logging. The plain
old syslogd you get with most Unix flavours won't do this, but you
might be interested in syslog-ng.

There too, a syslogd with a SQL backend would facilitate your goal. See
also the pflogsumm Perl script, which does better than separate logs;
it gives you human-readable summaries, per domain if you wish.
