stupid question about sasl

Ok .. so I am going to sound really dumb ... will not be the first time.
I installed postfix, spamassassin, courier-imap, post drop and anomy.
Everything went great. Everything was working ... and still is.
I then got the bright idea to want authentication .. so I reconfigued
postfix to use cyrus-sasl .... so .. now it is configured, and I can
manyally test the configuration by tellnetting to the port, and running
the AUTH PLAIN command with the encryption string ....
So thats great ... but now what .. How do I get it to work with a client
... and how do I force clients to use sasl ???
After I get this working I will use TLS to encrypt .... but that is latter.
