Mail advice appreciated

Hello. I am undertaking a project to redesign the way
mail works on my network. I have used Postifx a few
times before so it's my choice of mail server.
Currently I have use an external web hosting company
that provides web and mail services. I have set up
clients to pop mail direct. Due to very poor
performance (mail taking hours to be delivered), I
would like to set up my own mail server to fix this
problem and also allow for local users to send mail
instantly.
My idea is to point the MX records to my router, then
port forward all mail traffic to an internal Postfix
server. What other options do I have or am I on the
right path already?
I also have to give an estimate on time taken to do
this project before I can start. This is hard for me
to guess since I don't do this sort of thing every
day. I know it will take me quite a while considering
I have to also configure spam/av filter, and allow for
testing and writing docs. How many hours would most
people allow for doing this at an average pace?
I'd like to hear some advice direct from the trenches
