In case of doubt it is alwas best to read the fine manual. The man page
for transport does indeed mention a "*" though it doesn't tell anything
if a pcre or regexp table is necessary to use it.
The transport table overrides other settings like relay_host. Set
relay_host for all mails that Postfix does not know locally.
main.cf:
relay_host = mail.example.com
