Thanks all for your help. Using 'alternatives --configure mta' showed
that even though sendmail was not supposed to be running that the os was
still using it. When I told it to use postfix, the transport map
started working as expected. I am now able to send external email.

still does, and postfix.
I uninstall sendmail which does not affect postfix. Alternatively you
can
use the 'alternatives' command to set which MTA the box uses.
Im not on a linux box at the mo so I cant remember the syntax, but it
something like 'alternatives --configure MTA postfix'.
