I do not know of a postfix setting that would cause such behavior. But
what you are describing without a sniffer capture or anything to further
diagnose the issue makes it hard and it surely sounds like a fragmentation
issue. Meaning the email with no data gets through fine but the email with
data is not making it or being sent twice due to corrupt or incorrect
fragmentation on the path to gmail. But just to make sure it is not a
postfix issue you may want to post a

postconf -n

So others can double check your config. After looking at things for a
while it always helps to have other eyes on it.
