I would suggest you write a couple of scripts based on the grep command, each to present a view of the maillog the way you want it.

Subject: advanced log options

I cannot seem to find any documentation on advanced logging options for postfix. I would love to have my log broken up into separate files, one for received emails, one for turned down spam and failed emails, and one for just logins and such. If anyone has a link to some pages, or has some advice drop me a line.
