Apple ships Mac OS X with a modified version of Cyrus SASL and a modified
version of Postfix. The Cyrus SASL version brings many non-default mechanisms
and auxprop-plugins specific to Apple applications and the Apple Postfix
version was patched to use the Apple Cyrus SASL implementation.

Unless you 'really' know what you are doing on an Apple Mac OS X machine, you
are probably better of going with what is there. If you are ready to go the
hard way, take a look at the patches in order to understand what they change
so you can work with the system.
