The problem with that is if something goes wrong they probably wouldn't know
what to do. What works today may not work tomorrow.

Consider having a box built and ready to drop in. Then you can write
directions on how to unplug the failed one, insert the replacement and
update as needed. If you want it scripted, because there are many ways a
mail server could be configured, you would be the best one to create the
script.
