"Peeling off" users at primary server, sending rest to secondary...

Hi, all. I want to set up an external server at a co-location for my
off-site personnel; I'd like it to be the primary MX for the company. It
would receive all the mail, "peel off" e-mail for the off-site folks, then
send the remaining e-mail to our internal server. Sounds nice, but I'm
not sure how to implement it without being kind of hokey. Suggestions?
