MailScanner can delete spam for you with "Spam Actions" and "High Scoring
Spam Actions".
Look in /etc/MailScanner/MailScanner.conf.
If you need help ask on their mailing list, they're usually very helpful:

If you want a "Spam" folder, you'll need to configure your delivery agent
so that it delivers messages differently depending on MailScanner's spam
score headers.
