Do you know if it is possible to modify something more tan RBL response (and
code)? For instance, to customize the SMTP reply for an unknown client (a
part from the reject_code). I don't find it.

Doing a quick search in the Postfix documentation should yield this:

to customize the RBL response Postfix gives.
