Postfix uses the syslog facility to do its logging, so this is really
a question about a basic system administration task: configuring
syslog.
With a caveat that different Unix-ish OS's do syslog slightly
differently and you neglected to mention what OS you are running...
You probably need to edit /etc/syslog.conf and send a HUP signal to
your syslog daemon to reload that file. try these for more info:
man syslog.conf
man syslogd
(and again, those may not be the same on all systems....)
