This may very well be a general Apache/timezone issue, as another reply
pointed out that the date/time indicates PST and not PDT. I am a little
fuzzy on what I need to do about that, but the time appears to be correct
and log files appear to be current.

If this truly is not a Postfix problem, just tell me and I will go
elsewhere.
