I don't see why you don't do the obvious thing, if you're that worried
about redundancy, and just cluster the Exchange server with another
Exchange box. That will solve all of your configuration and maintenance
hassles (because what will you do with all the extra emails that you're
holding on the Postfix box - how will they get discarded when no longer
needed?) - use Postfix for the gateway server only, where it will carry
out its protective function well.

If your organisation is so small that an extra Exchange box (and shared
storage) is not worth the expense, how long will it take you to do a
full restore of the mail services? Less than half an hour to get
Exchange up and running again, plus whatever it takes to do your data
restore. Of course, if it's a catastrophic hardware failure and you need
to get new parts in, that will affect your recovery time.
