You did not follow the instructions correctly:
make makefiles CCARGS='-DUSE_SASL_AUTH -DDEF_SERVER_SASL_TYPE=\"dovecot\"'
Note the <\> characters before the <"> characters. These were lost in
your "gcc" command. Note also the carefully chosen single (not double)
quotes around CCARGS.
