it's ok to have mydomain = myhostname.
should you change anything, it would be the hostname of the machine (to
something like "hostfoo.students.wes....") but then you may break things
in your system (and you'll need to update dns)...

The smtpd banner has nothing to do with mail you send. it is how postfix
welcomes clients (including MTAs) at reception time.
remove the setting from your main.cf (so that postfix uses the default
value) and if you have any problems, come back with detailed infos on
what's happening... etc.
