Of course the real log is no longer available,
but syslogd can be told to 'listen' additionally
to an alternate 'socket' residing inside the chroot jail.
I followed the instructions on
http://www.edu.ee/LDP/HOWTO/Chroot-BIND-HOWTO-1.html
for a redhat 6.x Linux - everything went fine.
